I have lost 6 pounds in the last two weeks because it is so hot I haven’t wanted anything heavy or greasy. I decided to make egg and olive. Well, that’s what we call it. Some people call it egg salad. We always had it the day after Easter. LOL! I make it with 3 things: boiled eggs, olives with pimento, and Hellman’s mayonnaise. Boil eggs. Put egg in water with ice to cool down and it helps to get the shell off. Chop up olives. As many as you like. Mayonnaise to blend the two together. Don’t overdo the mayonnaise. Fold or blend easy. On toast, bread, crackers. Oh so good and light. Now the other summer sandwich I like is a tomato sandwich. It’s basically 2 pieces of toast and big slice of a cold ripe tomato and mayonnaise. I have to have salt and pepper, and sometimes a touch of garlic. I put on a piece of lettuce when I want something different. Easy Simple and oh so good!
